Glen & rachelle
We’re a father-daughter duo on a mission to bring bold, handcrafted Polishire bagels to Winnipeg. For nearly 2 years, we’ve been testing recipes, travelling through Europe, and learning from bagel aficionados across Canada, the U.S., the U.K., and Poland.
Glen’s the bagel alchemist and the dreamer. Rachelle runs the operation and keeps the wheels turning (with the occasional poke to Glen!) Together? We’re building something incredibly delicious.

At The Forge Bagel, our passion for bagels runs deep. Bagels have always been a staple in our family - something simple yet special that always brings joy. We chose bagels because they are more than just food - they’re an experience.
